These recipe is quick and easy because it uses one of my favorite kitchen tools — Crock Pot! Just throw all the ingredients in the slow cooker for 5 hours, shred the pork, then top tortillas with the meat and your favorite toppings! If you are busy or have to run errands, then just get everything in the crockpot before you leave and set a timer if needed. Then dinner will be all ready to go when you and the family gets home!

    Ingredients
    1 pork butt round
    1 chopped white onion
    8 oz. chopped cremini mushroom
1 jar of mild Green Salsa Verde (Trader Joe’s “Salsa Verde” is my fav)

    Directions
    1. Toss all the ingredients into crock pot and cook on low for 5 hours
    2. Shred the pork using two forks and stir together with all the ingredients 3. Serve in tortillas (I like to warm brie y right on the stove)
    4. Optional toppings might include: avocado, cheese, radish, cilantro, lime ... oh,
    and one Corona

If you DO have time to throw a party or fiesta, then just double the recipe and your tacos will be the hit of the party!
